Fridge Clean-Out Veggie Tacos
Sometimes, cleaning out the fridge isn't so bad. Especially when you make satisfying, filling veggie tacos. I had to get rid of a couple of things in the fridge before they went bad, and came up with this! Sauteed mushrooms, marinated tempeh, pinto beans, kale, pico de gallo, and avocado all went into this taco concoction. And also nutritional yeast, or NOOCH, to top it all off. I ate 2 tacos and they filled me up real quick. Anyway. I hope you try this.
Fridge Clean Out Veggie Tacos
QUICK MARINATED TEMPEH - Slice tempeh into thin slices and marinate for about 30min in tamari, garlic powder, maple syrup, and a little sesame oil. Fry in a pan with a little olive oil until brown. Set aside and pour the rest of the marinade on top. We don't waste around here!
SAUTEED MUSHROOMS - Sautee mushrooms in a skillet with a little olive oil, salt, garlic powder, and splash of tamari.
PINTO BEANS - In a small pot, add drained and rinsed can of pinto beans, a small tomato (diced), smoked paprika, salt, pepper, garlic powder, cumin, and a little water. Heat until all ingredients are combined and to your liking.
PICO DE GALLO - Combine diced tomatoes, onion, cilantro, salt, pepper, and squeeze of lime in a bowl
TACOS - sautee tacos on a skillet until hot (I used my favorite Siete Cassava Tacos)
On a plate, add tacos, beans, mushrooms, slices of tempeh, greens (I used red kale), pico, avocado, and a sprinkle of NOOCH and hemp seed hearts. Top with hot sauce, of course.
