Quick Watermelon Salad & Burger Dinner

It's getting cold in the Bay (48 degrees in the Am!) and even colder on the East Coast (snow?!), so I am looking back on warmer days and delicious summer meals. This DIY sort-of-burger-bar and golden watermelon salad combo can still be made in the cold months, in under 30 minutes, with plenty of time left to hide under the covers. 

INGREDIENTS

golden watermelon

feta cheese

mint

BURGERS

1 lb quality ground meat of your choice or veggie patties

Salt/Pepper

Onions

Garlic powder

Tamari

Coconut Aminos

Fresh herbs - mint, parsley, dill, cilantro

OPTIONAL SIDES

Shredded Carrots

Cucumbers

Spinach

Lettuce

Red Onion

Sriracha Mayo sauce (Veganaise, sriracha, and  splash of lemon combined to your desired spice level)

 

 

 

instructions

If you are using veggie patties, cook as instructed. 

For ground meat, combine with 1 tsp garlic powder, 1 tsp tamari, 1 tsp coconut aminos, 1/2 finely diced onion, and a sprinkle of chopped fresh herbs of your choice (mint is great with lamb!).  

Cook a small spoonful to try and add salt and pepper if needed. Adjust taste as desired.

Form patties and fry in skillet until cooked through. In the meantime, slice the cucmbers, carrots, and onions.

Prepare sriracha mayo.  

To prepare watermelon salad, slice watermelon into cubes. Add feta and mint until you achieve taste preference. I do not measure when I cook so the portions are up to you!
