Chia Seed Pudding

This recipe was recommended by a co-worker and is an adaption of Giada de Laurentiis' version. Be prepared to make larger batches if you live with a boy who will eat it all and make you sad. You can also find Giada's version here.

Giada's Chia Seed Pudding


In a mixing bowl, combine all ingredients except chia seeds. 

Once all ingredients are incorporated, whisk in the chia seeds and wait 30 minutes. Stir mixture to distribute chia seeds again if they have settled.

Refrigerate overnight. 

To mix it up, add frozen pureed mango or strawberry or whatever fruit you desire. This will make next level pudding and you'll probably have to make more.


1 cup cashew milk (or whatever nut milk you prefer)

1/4 c chia seeds

2-3 tbsp maple syrup

1 c vanilla yogurt

2 tsp vanilla extract

pinch of kosher salt
