Greens and Eggs For Breakfast


Happy New Year! I am fully recovered from the holiday cooking and eating, so here's a healthy, satisfying breakfast that you can whip up real quick. We are a veggie-loving household, so the more green I see on my plate, the better.

As a big advocate for eating whole, clean foods, I've seen my skin, energy, and my body respond so positively that I'll be sharing more and more recipes catering to good, sustainable eating. Keep an eye out :)

Simple Green Breakfast

olive oil fried egg - Fry egg on a cast iron skillet on medium high heat with 2 tbsp olive oil until the bottom is crispy, sprinkle with pink salt and black pepper.

toast - I used Udi's Gluten Free, Whole Grain toast and popped it into my toaster, topped with a dollop of Earth Balance vegan butter.

mixed salad - Combine frisee, cucumber, local cheese (I used local goat cheese from the farmer's market) with a drizzle of olive oil, meyer lemon, and course pink salt. 

Add avocado and fruit if you like. I ALWAYS add avocado as a healthy fat in my meals. It is rich in omega-3 fatty acids (promotes cardiovascular health; reduces cholesterol) and does wonders for your skin, hair, and nails.
