The Easiest Lentil Tomato Stew Recipe w/ VIDEO

Sick? Cold? Hangry? This hearty and nourishing lentil stew recipe is easy, cooks up fast, and is extremely satisfying.

I used a New York Times recipe from Martha Shulman (here) and adapted it to my taste and preference. My recipe version and VIDEO are below.


1 cup rinsed green lentils

6 cups water

half an onion, cut

2 cloves garlic

2 bay leaves

3 tablespoons tomato paste

1 tsp seasoning salt

2 tsp sea salt

1 tsp turmeric

1 tsp ground ginger

1 tsp garlic powder

2 carrots

3 small sweet potatoes

1 golden potato

2 cups spinach


1. Bring water, rinsed lentils, half onion, garlic, and bay leaves to a boil. Simmer for 30 minutes.

2. Remove onion and bay leaves. Add the rest of the seasonings, tomato paste, carrots, potatoes, and spinach. 

3. Simmer stew for 30-35 minutes. Serve over rice and top with cilantro, parsley, Sriracha, lemon, whatever you want!
