Yolk Porn Is a Thing

I ran into a co-worker in our office kitchen who told me they were expecting a weekend brunch Instagram photo, specifically with some type of fried egg/hot sauce/avo combo. I guess I'm known as a weird fried-egg lady now. And I'm 100% pretty satisfied with that. And I'm 100% going to keep posting fried egg photos because I like all the eggs! I'm glad that's what I'm known for.

Lately I am all about simple, wholesome, real food that I can whip together and get to eating as fast as possible. Because waiting for my food  honestly makes me the most impatient person. Ever.

I bring to you a lovely grain bowl, filled with all the goodies. There's yolk porn in this post FYI. Warning. Enjoy this everyday because that's what I do and I can't stop. I need help. SOS.

Quick Fried Egg Grain Bowl

Whole Foods Organic Veggie Quinoa 

Bilsinki's Spinach Feta Chicken Sausage

1 (or 2) eggs

Organic Spinach

Chosen Foods Avocado Oil

& any fixin's you please!

INSTRUCTIONS

Cut sausage on the diagonal. I use 1 sausage per person. 

In a hot cast iron skillet, fry sausage with Chosen Foods Avocado Oil.

Add veggie quinoa to a separate pan and sautee until cooked. Cover and let rest while you fry egg.

My favorite way to fry an egg is on the cast iron skillet with Avo oil, medium-high heat. I like that crispy brown bottom so drop the egg in and season with whatever you please. As the bottom gets crispy, cover the pan with a lid and let it steam. This helps cook the top whites and yolk. Remove from pan when you reach your desired level of crispiness. YUM.

In a large bowl filled with spinach, add quinoa, sausage, and egg in their own little section of the bowl. Top with lots of sriracha!
